Truffles are a little bit cultivated with a bigger part magic. Our Truffière is planted with Quercus Ilex (Evergreen Holly Oak). The trees are innoculated at a young age with Tuber Menanosporum fungus that can produce Black winter truffles (Périgord Truffles) between June and August – if you’re local and want to try fresh truffle please get in touch!

What are Black winter truffles

Black winter truffles, also known as Périgord truffles, are a type of edible fungi that grow underground in the root systems of certain trees, (Commonly oak, hazelnut, and chestnut). These truffles are highly valued for their pungent and earthy flavor, as well as their rarity and the excitement in finding them.

The black winter truffle season typically runs from June through to early August (Southern Hemisphere!). The truffles are found by trained dogs, which can detect their scent through the soil. Then harvested by careful hands.

Black winter truffles are often used in high-end cuisine and are considered a delicacy. They can be shaved or grated over dishes such as pasta, risotto, or roasted meats to add a rich and intense flavor. Truffle oil, made by infusing oil with truffle essence, is also a popular ingredient in many dishes.

Truffle pricing varies depending on the grade, type and the time of season. Current guidance in New Zealand for premium grade truffle is around $3.50 p/gram for presenation grade Tuber melanosporum.
