Storing, Cooking and Eating!


I have to say first – Don’t Cook the Truffle! Truffles are most special because of their aroma and overcooking diminishes the flavour. Of course you can cook it, but it would be like drinking beer from a bottle – you miss out on half the fun!

Fresh truffles can be kept for 2 weeks if well looked after. They need to be kept dry and chilled. They behave like any fresh produce, and some will last longer (we’ve had some still smelling lovely after a month!).

We recommend for our customers to store the truffle in a sealed container with a paper towel, and to change out the paper towel each day.

The truffle aroma can be used to infuse other fatty products. If you store the truffle with raw eggs, cream, milk or even cheese. The truffle smell can permeate into the fats, ready to be released again when served. A suggestion for the egg is to lightly poach, so as to not remove too much of the aroma.

Don’t store truffles in an open container in your fridge… Everything will smell like truffle!
